I love chili and could actually eat it all year round, though I do try to save it for the colder months! I got this recipe from The Fixate Cookbook in which you can order here! A lot of my recipes come from this book because all of the meals are created to fit specifically into my meal plan!
TURKEY CHILI: (½ G, 1Y, 1R ½ tsp) 8 servings
2 tsp olive oil
1 medium onion, chopped.
1 medium green pepper, chopped
1 medium red pepper, chopped
2 cloves garlic, finely chopped
1lb lean Ground turkey or beef (93%)
2 cans Kidney Beans
1 can diced tomatoes
1C Red wine
1 TB chili powder
½ tsp sea salt
1/4c Cilantro
1. Heat oil in large saucepan over medium-high heat.
2. Add onion and bell peppers; cook, stirring occasionally 5-6 minutes.
3. Add garlic; cook, stirring frequently, for 1 minute.
4. Add turkey, beans, tomatoes (with liquid), wine, chili powder, and salt. Bring to a boil. Reduce heat; gently boil, stirring occasionally, for 20 minutes, or until slightly thickened.
