My whole point in doing this is to prove that healthy food tastes good, it’s easy to make, and also – you don’t have to give up your favorite meals! As a foodie myself, these were the truths that I had and had to learn how to re-programming those thoughts.
Today, I am sharing with you my Mushroom Risotto Recipe!
The first time that I made this meal for my husband he thought that it was some fancy meal that only the most Profession Kitchen Slayers could produce and I’m not even going to lie, I allowed that belief to inflate my ego and never shared just how simple and easy it is to make.
In this recipe, I do use Short Grain Brown Rice instead arborio which gives a different texture but the flavor is still absolutely amazing.
1 medium Yellow Onion, diced.
2 cloves garlic, minced.
1 tsp Coconut Oil
3 C Chicken Broth (Or beef)
1 1/2 C Brown Rice.
1 C Parmesan.
8 oz Spinach, chopped.
8 oz Mushrooms, shopped.
Bring broth to a boil in a sauce pan.
In a skillet, saute onions and garlic together until transparent.
Add rice to skillet mix around for about 2-3 minutes, the rice will smell nutty.
Add boiling broth to skillet, cover and reduce.
Once there is no more liquid (review rice cooking directions for guidelines)
Fold in Spinach and Mushrooms.
Mix in Salt and pepper.
You can easily add in meat or even serve this as a side, It’s really adaptable which is why it’s one of my favorite meals! On Friday, I had some steak on hand and actually added that in – though my favorite combination is with Spinach and Mushrooms alone.
