All Things Pumpkin!

I love me some pumpkin! I will eat it all year long – but when it comes to that sweet pumpkin spice deliciousness, I reserve that for just the fall season.

There is nothing like Pumpkin Deliciousness for breakfast paired with Starbucks Thanksgiving Blend coffee on a dreary morning! I’m going to share with you my favorite pumpkin breakfast recipes!

QFC always have the ingredients I need, but especially when it comes time for the holidays, they have the best prices, always in stock, they’re stores are easy to navigate, they have friendly staff, and you can get in and out quickly! I mean, what more can you ask for during the holidays?

My love of pumpkin also has to fit into my fitness journey and luckily these recipes do!

Pumpkin Super Hero Shake

1 Scoop Vegan Cafe Latte Shakeology
1C Almond Milk
1/2c Water
1/2 Banana
1/2 Kroger brand canned Pumpkin
1tsp Pumpkin Pie Spice
Ice
– Throw it all in a blender and enjoy!

++Bonus points to put in an over-sized mug!

 

Overnight Pumpkin Oats

2c Almond Milk
1/2c Kroger Brand Canned Pumpkin
3tb Grade B maple Syrup
1 tsp Pumpkin pie spice
1 tsp vanilla extract
2c Rolled Oats
Mix together, divide equally into 4 bowls and refrigerate overnight.
Top with chopped nuts! (I used Kroger Chopped Pecans!)
Pumpkin Pie Pancakes

1/4c Sugar
2tsp Baking Powder
1 tsp Baking Soda
2 tsp Pumpkin Pie Spice
1/2 tsp Pink Himalyan Salt
1 1/2c Almond Milk
1c Kroger Canned Pumpkin
1 egg, beaten
2tb melted butter
1tb Apple Cider Vinegar
(Butter, Maple Syrup, Chopped pecans)

In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, allspice, cinnamon, ginger, and salt.
In another mixing bowl, whisk together milk, pumpkin, egg, butter and apple cider vinegar. Pour wet mixture into dry ingredients and stir until combined.
Preheat griddle to medium-high, scoop batter in 1/4c portions onto griddle and cook until the tops of pancakes begin to bubble and undersides are golden brown, 3-5 minutes. Flip and cook until brown on the other sides, another 3 minutes.

Serve with butter, Grade B Maple Syrup and Chopped pecan, freeze leftovers!
